“One of our fundamental interventions was a deviation from the classic Karst wine history. We began planting other sorts and exploring everything that this territory could give us. On good vintage, I tried to get the most out of nature and leave grapes on the vine for as long as possible, not picking them as soon as they reached physiological ripeness. We went considerably further with it.”
